Passito Ambrosia

The Passito Ambrosia is the true handmade kind of wine, only produced in very specific and ‘happy’ years, and its characteristics may change according with the wheater’s changes.

The wine shows a beautiful intense and dark yellow, at first fragrance you feel sharp sensations of ripe fruits, especially overripe apricots, notes of white flowers emerge later as thrush, orange blossom and viburnum, and finally smells of citrus, cedar and bergamot.

The palate affects the harmony and balance between hot components and the fresh ones, between alcohol and sugar on one side and the acidity of the other, determines freshness and flavor just bitter.

Grape: Moscato;Planting year: 1999; Vines_Yield/ha: 4,800_10 q.; Soil: calcareous with sub-alkaline pH. Altitude a.s.l.: 315 m.; exposure: South / Southeast; Harvest: mid-October; Wine-making: soft pressing; alcohol fermentation in small French oak casks of medium toasting; Aging: 18 – 24 months in very small selected barrique; Yearly production: 1,500 bottles; Alcool: 12,5%; Left Sugar: 150 g/l., total acidity based on tartaric acid 5,3g/l., ph 3,5. Food pairings: aged goat cheeses, blue cheeses; biscuits, pastries. Serving temperature: 12 – 14° C.
